Super Sunday brunch

Here is a quick and interesting Sunday brunch

NO! NOT in the kitchen on a Sunday. With the family at home nobody likes to be cooped up in the kitchen. So, it's best to change the routine. Combine breakfast and lunch and serve the family a super substantial brunch of sizzling liver with apples, baked beans with capsicum and ham, French toast with grated cheese, or kedgeree Indiana. All these dishes can be prepared in a jiffy, with a handful of ingredients you're sure to have on hand. Whichever dish you pick on see that you serve them sizzling hot and you will have a spread that will be your Sunday best.

LIVER WITH APPLES

Ingredients
Lamb liver — 200 gm.
Onion — 2
Apple — 1
Flour — 2 tbsp
Green chillies — 2
Pepper powder — 1/2tsp
Worcestershire sauce — 1tsp
Sugar — a dash
Butter — 2 tbsp
Salt — to taste
Slices of toasted bread

Method

Cut the lamb liver into slices. Dredge the liver in flour; seasoned with salt, pepper and dash of chilli powder if desired. Heat half the butter and sauté the liver pieces till brown. Heat the remaining butter in a separate pan and fry the sliced onions and the chopped chillies till tender.

Do not brown. Strain out the onions and add to liver. Sprinkle Worcestershire sauce. Slice the apple and fry in the same pan in which the onions were fried, on a low heat till barely tender. Sprinkle sugar. Place the liver and onion on rounds of toast and top with apple. Place under grill for a few minutes and serve.

BAKED BEANS WITH CAPSICUM AND HAM

Ingredients

Baked beans — 1 tin
Shredded, cooked ham —
250 gm.
Capsicum chopped — 2
Butter — 1 tbsp
Pepper powder

Method

Heat the butter in a pan and sauté the capsicum and ham till the capsicum turn limp. Add the baked beans, season with pepper and heat thoroughly. Serve on pieces of toast, garnished with sliced hard -boiled egg.

FRENCH TOAST WITH GRATED CHEESE

Ingredients

Bread slices — 8
Milk — 1cup
Eggs — 2
Salt — to taste
Grated cheese — 250gm.
Chilli powder — 1/2tsp
Butter — 3tbsp

Method

Beat the eggs lightly and add 3/4th cup milk. Season with salt. Dip the eggs slices in milk mixture. Grease a heavy pan generously and fry the soaked bread slices till brown on both sides. Put the fried bread in a hot oven for about 10 minutes. Meanwhile, put the cheese, remaining milk, chilli powder and butter in a saucepan and heat on low flame. Stir till cheese melts and the mixture is well-blended. Spoon the mixture over the toast and put under grill or back in the oven to brown for a few minutes.
