Quick and easy

CONVENIENT FOODS such as rolls, hamburgers and pizzas made with a little imagination make perfect snacks and takeaways. Here are some easy-to-make and quick recipes.

French rolls

Ingredients
For the stuffing
Mincemeat - 200gm
Peas - 100gm
Cheese grated - 100gm
Onion (one to be ground, the other to be chopped) -2
Garlic - 6 cloves
Poppy seeds ground -1/2tsp
Coriander powder -3/4tsp
Chilly powder -1/2tsp
Green chilly chopped -5
Coriander leaves - 2 bunches
Ginger chopped -1/2 inch piece
Refined oil - 2tbsp
Salt -1/2tsp
Breadcrumbs -1cup
For the dough
Flour -250gm
Eggs -2
Refined oil -1tbsp
Milk -1tbsp
Saffron - a pinch
Salt - 1/2tsp
Baking powder - a pinch

Method

Heat oil and fry chopped onion. Add mincemeat and all the ground ingredients together with a glass of water. Cook till soft and dry. Add peas and cook till tender and dry. Mix grated cheese, green chillies, ginger, coriander leaves and salt

Knead the flour with all the ingredients to stiff dough. Divide the dough into equal portions. Shape these to resemble fish and stuff them with the prepared mincemeat. Roll in breadcrumbs, deep fry and serve hot with tomato sauce.

Vegetable Pizza

Ingredients

For the crust
Flour - 4 cups
Yeast - 2 tsp
Lukewarm water - 1cup
Oil - 2tbsp
Salt - 1/2tsp
Sugar - 1tsp
For the filling
Tomato paste - 350gm
Thinly sliced brinjals - 2
Thinly sliced onions - 2
Garlic - 6 cloves
Water - 2tbsp
Vegetable oil - 1/3cup
Coriander leaves - 1tbsp
Salt and pepper - to taste
Grated cheese

Method

Mix yeast, sugar and little lukewarm water. Cover and allow to rise. Sift flour and salt together in mixing bowl. Mix with oil and lukewarm water. Remove dough from the bowl and shape into a ball. Knead briskly till soft and well blended.

Cover with a wet cloth and allow it to rise for two hours. Roll out and place on a greased tray. Combine tomato paste, garlic, oil, water and seasoning. Spoon it over unbaked crust. Arrange brinjal and onion slices on top and sprinkle with grated cheese. Bake in a hot oven for 10 to 15 minutes.
