Konju Paal Curry
Ingredients
Scampi- 200gms
Onion - 50gms
Ginger - 3gms
Garlic- 3 gms
Curry leaves-1leaf
Green chilliess- 3
Coconut - 1/4
Coconut oil- 50ml
Turmeric powder- 2gm
Vinegar- 5ml
Salt to taste
Lime- 1/2
Method
Clean and marinate the scampi with turmeric powder, salt, lime and vinegar. Soft fry the scampi in 25ml coconut oil. Heat oil in a thick pan and add juliennes of ginger, garlic, green chilly and fry till brown. Remove excess oil and add turmeric powder, salt, vinegar and second extraction of coconut milk. Bring to boil. Drop the soft fried scampi in this gravy and allow it to simmer. Pour the first extraction of coconut milk and reduce the heat. Serve hot with rice.
