Fruit delights

If you love fresh fruits, then you could try out these scrumptious recipes


ALL OF us love to feast on fresh fruits. So, this time I have given simple fruit recipes, which you can try at home at leisure. Begin with mango whip that has to be prepared with a combination of mango puree and cream. Follow it with strawberry tart that has lots of fresh fruits. To finish on a real sweet note, try the chakka pradhaman, for that Kerala flavour.

Mango whip

Ingredients

Mango puree (Alphonso) - 1/4 kg
Sugar - 100 gm
Double cream - 100 ml
Mangoes (sliced) - 2
Method

Mix mango puree with sugar. Fold in double cream. Set in mould cups. Garnish with layers of sliced mango. Serve chilled.

Strawberry tart

Ingredients

Flour - 100 gm
Fat - 100 gm
Icing sugar - 50 gm
Egg - 1/2 (optional)
Milk - 10 ml
Vanilla essence - 5 ml
For filling
Cream (double whipped) - 100 ml
Strawberry puree - 25 ml
Fresh fruits (chopped) - 25 gm
Sugar - 50 gm
Whole or half strawberry - 2

Method

For tart base


Cream fat and icing sugar. Mix egg or milk and vanilla essence. Add flour. Base a tart mould. Bake at 160 degree C for 20 minutes. Whisk double cream adding powdered sugar. Introduce strawberry puree and chopped strawberry. Pipe into tart shell. Decorate with strawberries and serve.

Chakka pradhaman

Ingredients

Ripe jackfruit - 100 gm
Coconut - 1
Milk - 100 ml
Jaggery - 25 gm
Cardamom - 5
Ghee - 10 ml
Cashewnuts - 10 gm

Method

Cut jackfruit into small cubes. Cook in ghee and keep aside. Make coconut milk. Boil it. Prepare jaggery syrup and strain it to remove dust particles. Mix jaggery and milk. Cook till it thickens. Add coconut milk, bring to boil and remove from fire. Add cardamom powder and cooked jackfruit. Garnish and serve hot with fried cashew nuts.
