Cool concepts with papaya

As a fruit or as a smoothie, papaya is an all-time favourite
|
A RICH source of vitamin A, papaya is no ordinary fruit. Though some dislike it for its smell, there are others who relish the fruit to their heart's content. Make a curry with an unripe one or a juice/ smoothie with a ripe one. You could try out these simple recipes with this fruit-for-all-seasons.
Ice Magic
Ingredients:
One papaya, cubed - about 2-1/2 cups
Juice of 1 lime - about ¼ cup
Honey - ¼ cup honey
Water - ½ cup
Method: Heat the honey and water mixture, reduce it to 3/4th. Puree the papaya and freeze. Break the frozen papaya into small chunks and put the chunks back into the food processor. Whizz it around for a while.
The longer you whizz it, the more the texture of the sorbet will resemble an ice cream. Transfer immediately or scoop into an airtight dish and freeze. You can store it for up to one month with no loss of flavour.
Speedy the monkey smoothie
Ingredients:
Orange, peeled - ½
Papaya, peeled - ½
Banana - 1
Limejuice - 1 tbsp
Crushed mint leaves - 6-7
Ice cubes (optional) - 3
Method: Take the juice of papaya and orange, and blend it with banana and ice until smooth.
Custard
Ingredients:
Papaya (pureed) - ½ kg
Butter - 3 tbsp
Honey - 2 tbsp
Milk - 2-½ cups
Sugar - ½ cup
Method: Heat milk, add sugar and honey cook till milk reduces to half. Add corn flour dissolved in 3 tbsp cold milk. Cook the papaya puree in butter and add to the above. Chill in freezer till set.
Papaya relish
Ingredients:
Green (unripe) papaya (shelled and sliced thinly) - 2 (shelled and sliced thinly)
Sugar - 250 gms
Vinegar - 1.5 lt
Oil - 50 ml
Kalonji (onion seeds) - 2 tbsp
Methi seeds - 2 tbsp
Mustard seeds - 2 tbsp
Jeera (cuminseeds) - 2 tbsp
Bayleaf - 3
Peppercorns - 2 tbsp
Cloves - 2 tbsp
Cinnamon - One 1" stick
Fennel seeds - 2 tbsp
Whole red chilli (dry) - 8-10
Ginger (chopped) - 4 tbsp
Method: Heat oil, add all the seeds, whole red chilli, cloves, pepper corns, bayleaf, cinnamon. When they start crackling, add sugar, and as soon as it melts, add vinegar. Now, add 200 ml water.
Add sliced papaya. Cook till sugar syrup reaches one string consistency.Cool. Serve chilled as an accompaniment.
