Soups for summer

Add cold soups to your drinking binge in this summer


IF YOU thought soups are only for the chilly winter days then you are missing out on a whole range of delicious summer drinks. Cold soups make healthy and enjoyable summer meals. Try the following to see you through the summer.

Chilled tomato soup

Ingredients

Tomato puree, thick - 500 ml
Fresh tomatoes - 250 gms
Cucumber, small - 1
Capsicum -1
Onion -1
A piece of ginger
Garlic -1
Lemon juice - 2 tsp
Coriander, chopped - 2 tbsp
Salt, pepper and sugar to taste

Method: Parboil the tomatoes. Remove skin and cut it into small pieces. Chop the onions, cucumber and capsicum. Grind the ginger and garlic into a smooth paste.

Add lemon juice, ginger garlic paste, chopped tomatoes, onions, cucumber and capsicum to the tomato puree.

Churn it for a minute. Add sugar, salt and pepper. Chill this mixture thoroughly.

Pour the soup in soup bowls. Add a bit of crushed ice. Garnish with chopped coriander and serve chilled.

Carrot and orange delight

Ingredients:
Carrots - 200 gms
Orange juice, fresh - cup
Large potato - 1
Onion - 1
A piece of ginger
Water - 4-5 cups
Salt and pepper to taste
Coriander, chopped - 2 tbsp
Oil - 1tbsp

Method: Cut the onion, carrots and potato. Stir fry the onions in oil. Add ginger, carrots and potato. Cook on a low flame till the vegetables are cooked. Allow it to cool. Grind all of them into a fine mixture. Stain to get a thick puree. Ad the orange juice, salt and pepper. Mix well. Chill it and serve cold.

Cucumber mint soup

Ingredients

Cucumbers - 3
Fresh curd - 2 cups
Water - 2 cups
Black salt - tsp
Jeera powder, roasted - tsp
Mint leaves - 6-7
Salt to taste
A few mint leaves for garnishing

Method: Peel and grate the cucumber. Mix it with the curds and add mint leaves. Blend in a mixer and strain . Add chilled water, black salt, roasted jeera powder and salt. Mix well. Serve chilled, decorated with a mint leaf.

Cheese soup

Ingredients
Cheese - 3 cubes
White onion - 1
Capsicum - 1
Cucumber - 1
Milk - 3 cups
Butter - 1 tbsp
Salt pepper and sugar to taste
Coriander, chopped - 1tbsp

Method: Peel and chop the onion and cucumber into medium pieces. Chop the capsicum into small pieces. Heat butter and stir fry the vegetables. Cook until the vegetables soften. Allow it to cool.

Add cold milk to the above vegetables. Blend in a mixer. If the mixture is thick dilute it by adding water. Strain the mixture. Chill it. Add the grated cheese, salt and pepper and serve cold.
