A fine experience


ADDING TO the list of restro-lounges in Delhi arrives Mantra, an overall experience of fine dining. Lining up an appetizing cuisine with dishes flavoured with piquant sauces and fresh herbs and menus like the three course executive lunch, owner Aman Bedi and Chef Rahel have specially worked out in an imaginative style leaving no room for monotony. It provides a variety in every course of soups, starters, main course and desserts both in the vegetarian and non-vegetarian section.

Classy interiors in shades of saffron and black beckon you, and the music and ambience will lull you into a trance but the focal point of Mantra, as Aman says, is the mouth-watering cuisine. Probably for the first time, Southeast Asian cuisine has been blended with European continental cuisine and transformed by the chefinto a world wide variety of sea fare. Garden fresh herbs and vegetables blended with a profusion of crabs, lobsters, squid, salmon, exotic egg plant caviar and the vegetable thermidor, which is an added attraction to vegetarians. According to Aman, "You have to be honest with your ingredients to get the right flavours and blend ingredients accurately, herbs and sauces have to be used to enhance flavours rather than smoothen them and the quality of freshness of meats and vegetables has to be a constant factor in the kitchen." After all, a healthy mind exists only in a healthy body and so Mantra claims to provide you healthy food and encourages its regular diners to come for a total rejuvenating experience instead of just eating out. The rest is best left to consumers' choice.
