Coffee, cake and me

Here are some varied cake recipes


CAKES ARE welcome with a cup of coffee too as they are with tea. Baking a cake may be tedious to some but enjoyable at the same time.

Baking cakes requires some mastery, which can be acquired with practice. Have fun checking out these cake recipes.

Cinnamon coffee cake

Ingredients

Sugar - 200 gms
Butter - 125 gms
Egg - 1
Milk - 125 ml
Flour - 200 gms
Baking powder - 05 gms
Salt - 05 gms

Toppings

Brown sugar - 50 gms
Cinnamon powder - 10 gms

Method: Heat oven to 375 deg F and grease and flour the cake pan. Cream butter, add sugar and egg. Mix well, stir in milk. Sift together flour, baking powder and salt. Sift into mixture.

Blend well. Spread butter in pan.

Sprinkle with topping. Bake for 30 to 35 minutes.

Poppy seed coffee cake

Ingredients

Margarine - 150 gms
Butter - 150 gms
Sugar - 200 gms
Eggs (separated) - 4
Flour - 200 gms
Baking soda/baking powder - 5 gms
Vanilla essence - 3 drops
Poppy seeds - 60 gms
Buttermilk - 60 ml

Topping

Sugar - 60 gms
Cocoa powder - 2 tsp
Cinnamon powder - 1 tsp

Method: Soak poppy seeds in buttermilk for 15 minutes. Cream margarine, butter, sugar and egg yolks, and beat well.

Add dry ingredients and poppy seed mixture and vanilla essence. Beat egg whites stiff and fold into the mixture. Add topping ingredients. Bake at 350 deg F for 50 minutes.

Peach coffee cake

Ingredients

Sugar - 200 gms
Butter - 150 gms
Eggs - 2
Sour cream - 30 ml
Flour - 60 gms
Baking powder - 5 gms
Blanched peaches, chopped - 60 gmsVanilla essence - 2 drops
Salt - 5 gms

Method: Cream sugar and butter until light and fluffy, add eggs, sour cream and vanilla essence.

Then, add flour and baking powder sifted together.

Fold in chopped peaches. Pour in pan, bake at 325 deg F for 40 minutes.

Apple cheddar coffee cake
Flour - 200 gms
Baking powder - 5 gms
Salt - 5 gms
Butter - 60 gms
Sugar - 60 gms
Egg - 1
Vanilla essence - 2 drops
Milk - 30 ml
Cheddar cheese, grated - 60 gms
Apples, sliced - 1

Topping

Flour - 2 tbsp
Brown sugar - 30 gms
Cinnamon powder - 5 gms
Butter - 2 tbsp

Method: Preheat oven to 375 deg F. Sift flour, baking powder and salt. Cream butter and vanilla essence, and blend well.

Turn half the batter into a pan. Add in layers, half the cheese, half the apples, then remaining cheese, butter and end with apples.

Make crumbs of topping and sprinkle over apples. Bake 30 for minutes. Serve warm.
