Crispy, crunchy and cool

Salads are to a meal what olive is to martini and clove to ham. The added advantage.


SALADS ARE not mere side dishes, but the cheese on the cracker and the cream on the cake. Fresh, cool and crunchy salads can be made in a variety of ways.

Corn salad

Ingredients

Corn-200 gms
Vinegar-2 tbsp
Salad oil-2 tbsp
Honey-1 tbsp
Lettuce-1 stalk
Celery (chopped)-1 tbsp
Salt and pepper to taste
Method
Separate the corn from the cobs and boil for five minutes in salted water. Shred lettuce. Place these along with corn in a bowl. Toss in vinegar and salad oil. Mix. Add honey, salt, pepper and mix well. Sprinkle celery. Chill and serve.
Cabbage salad
Ingredients
Cabbage-300 gm
Medium sized carrots-5
Raisins-75 gm
Lemon-1
Honey-1 tsp
Shelled walnuts-50 gm

Method

Shred cabbage finely and mix with grated carrots and raisins. Mix lemon juice and honey with one

table spoon cold water and chopped walnuts. Pour this dressing over the salad and mix lightly

to spread it evenly. Refrigerate for ten minutes and serve.

Cucumber salad

Ingredients

Medium sized cucumbers (peeled, seeded, and cut into strips)-2
White vinegar-3 tbsp
Salt-1 tsp
Salad oil or sunflower oil-1 tbsp
Onions (sliced)-2
Garlic clove (sliced)-1
A pinch of turmeric powder
Sugar-1 tsp

Method

Put cucumber in a saucepan. Add two tablespoons of vinegar and enough water to cover it. Bring to boil and simmer for about five minutes or until the cucumbers become transparent. Drain and sprinkle ½ teaspoon of salt. And let it cool. Heat oil in a frying pan. Add onions and garlic and fry until crisp and golden. Remove from the pan and drain out excess oil on kitchen paper. Stir turmeric, sugar and remaining salt into the oil in the pan. Then cool. Stir in the remaining vinegar, and fold in the cucumber to coat well with the dressing.

Drain the cucumber and place in a serving dish. Sprinkle onions and garlic and serve.

Spinach and walnut salad

Ingredients

Spinach (washed and cut into pieces)-100 gm
Shelled walnuts (chopped)-25 gm
Spring onions (chopped)-2
Salad oil or sunflower oil-2 tbsp
White vinegar-2 tsp
Salt and pepper to taste

Method

Place spinach, walnuts and onions in a bowl. Add the remaining ingredients with salt and pepper to taste. Pour this dressing over the salad and toss well.
