Marwari magic...

AT THE Radisson hotel's Marwari food festival at its NYC café, the chef, Sunil Bhatt - whose ancestors have worked in the kitchens of the Maharaja of Jodhpur - came specially from Jodhpur.

The menu was filled with the de-rigueur Rajasthani items, but the preparation so beautifully carried out that the limited selection was no handicap. Take the laal maas, a meat preparation with gravy, or maas ke sooley - mutton kabab - or murgh ka mukul and aachari murgh. Vegetarian options included heeng dhaniye ke aloo and hari bhari mirch ki kadhai.

Among the traditional desserts were ghevar, choorma, halwa and jalebis. Some of these delicacies are back in the news thanks to Teej.
