RECIPE OF THE WEEK


Chicken with apple

Ingredients

Chicken: 1 kg
Chicken stock: 1 pint
Butter: 2 oz
Onions (medium sized): 2
Flour: oz
Sultanas: 2 oz
Juice: a lemon
Coconut milk: a coconut
Salt to taste
Curry paste

Method

To prepare curry paste

Grind together -- half a slice of onion, one large ginger, one-tablespoon red chilli powder, two green chillies, one-tablespoon coriander powder, tablespoon of turmeric powder and one-tablespoon garam masala. Make a fine paste and keep aside.

To prepare chicken curry

Clean and cut the chicken into medium sized pieces. Cut the apple and onion into small pieces. Heat one ounce of butter in a kadai and fry the chicken pieces in it for about five minutes. Keep aside when done.


Add one ounce of butter and fry the chopped pieces of onion and apple, for a few minutes. Then, slowly, add the flour and continue stirring. To this mixture add curry paste and fry well. Pour the stock over it and allow it to boil.

Put in the fried chicken pieces and add lemon juice. Cook for about 20 minutes, stirring from time to time, until the chicken pieces become tender. Add sultanas and thick coconut milk, stir for a few minutes and remove from heat. Garnish with green pepper and a few small pieces of apple. Serve hot.
