Ragi/soya savouries
Can any savouries be made out of ragi powder and soya bean powder?
K. Sarvamangala, Bagh Amberpet
THERE IS a local snack called fadda made out of ragi. To make it one has to make a thick paste of ragi powder, water, green chillies, chopped onions, jeera, ginger-garlic and salt. Banana leaves are cut into medium-sized pieces. With a wet hand put a little bit of the mixture inside the banana leaf and close it. Make several of them. Traditionally, they are just put into the burning embers and removed when the leaf is charred. But if you don't have a coal fire, don't panic. Just cook the banana leaf packets on both sides on a pan till leaf is black. Discard leaf and serve as snacks. Another traditional snack called chakulu is made of rice flour, green chillies, ginger and jeera. A thick paste is made with the above ingredients and water. With wet hands one presses them till they are very thin and round on a wet piece of plastic. These are then deep fried and served as snacks. Rice flour can be replaced by soya bean flour.
