Perfect Swiss roll


How can one prevent a Swiss roll from breaking?

TO AVOID a Swiss roll from breaking, one has to change the recipe of the basic sponge a bit. For every kilo of flour, one has to add 100 gms of corn flour. This will give your sponge more strength. Also be careful not to put excess sugar syrup in the sponge, when moistening it. It will become too soft and will have a tendency to break down. Do not use excess filling. Roll sponge in one smooth motion. Avoid stopping in between. I am sure the above will be helpful in ensuring that your Swiss roll doesn't break.
