Fried rice


How does one make good fried rice? Even when ajinomoto is added it does not taste like what is made in the hotels?

TO MAKE good fried rice at home, try the following method. Take good quality rice and boil the rice by the draining method, with a little salt. Let it cool and put it in the refrigerator overnight. Next day take a pan, oil your pan well, add extra oil and when it begins to smoke, pour out the oil. Repeat the process twice to avoid the rice sticking to the pan. Then put the other ingredients say vegetables for vegetable rice, egg for egg fried rice etc. Then lower the flame and add the rice. Add salt and a little ajinomoto. Adding more will not help. If you like you can omit it totally. Then add a few drops of dark Soya sauce, some spring onion leaves and cook till rice is evenly coated with Soya and the rice is hot.

There are few differences in the way rice is cooked at home and in a hotel. One uses the wok, which is large and can be tossed easily thus avoiding breakage of greens. The intense high pressure of the flame in hotels ensures easy heating of the products when tossed. So a few times, you may find differences between a hotel product and a homemade one
