Short eats from China

If you thought Chinese food only meant noodles and rice, these snack recipes would give a different perspective.

WHILE SPRING rolls are the most popular Chinese snack, there are other interesting things you could try out as these recipes show.

Okra tempura

Ingredients

Corn flour: 100 gms

Refined flour: 25 gms

Egg: 1

Chopped coriander: 2 gms

Chopped ginger: 2 gms

Ladies finger: 10

Salt: to taste

Oil: for frying

Water: to make the batter

Method

Heat the oil and fry the ladies' finger lightly. Mix the rest of the ingredients and make a batter. The consistency of the batter should be such that it coats the ladle slightly. Dip the ladies' finger in the batter and fry till crisp.

Vegetable and mushroom spring roll

Ingredients

Shredded cabbage: 1

Carrot julienne: 2

Capsicum julienne: 1

Mushrooms: 6

Soya sauce: 10 ml

Salt: to taste

Pepper: to taste

Spring roll sheets: 4 nos

Oil: 20 ml

Oil for frying

Method

Heat a little oil, then add the capsicum and saute for a while, then add the cabbage and the carrot to it and sauté more till they become soft. To this add the soya sauce, salt and pepper and cook for some more time. Then add the mushrooms and remove when mushrooms are soft.

Take the ready-made spring roll sheets and then roll the above mixture in it little by little. When all the rolls are made, then fry in hot oil, till golden brown and serve hot.

Vegetable parcel

Ingredients

Chopped carrots: 100 gms

Chopped beans: 100 gms

Chopped cabbage: 100 gms

Chopped capsicum: 1 no

Soya sauce: 10 ml

Pepper: to taste

Salt: to taste

Oil: 20 ml

Oil: for frying

Spring roll sheets: 4

Spring onion greens: 10

Method

Prepare the mixture, same as for vegetable spring roll. Put the spring onion (green leaves) in hot water for two minutes and then remove it from the water. Cut it into thin strips, resembling threads.

Take the spring roll sheets and cut them into square shapes, then fill it with the vegetable mixture. Holding the four corners of the sheet bring them close together and then tie it with the spring onion greens. (This will now resemble a bundle)

Heat the oil and fry till crisp, serve hot with tomato ketchup.

Sesame toast

Ingredients

Sliced bread: 4

Vegetables: (same as for vegetable parcel)

Sesame seeds: 20 gms

Egg: 1

Corn flour: 10 gms

Salt: to taste

Pepper: to taste

Sugar: a pinch

Method

Use the same vegetables as for the above recipe, add egg and corn flour to it and do the seasonings.

Spread this mixture on the bread slice, sprinkle sesame seeds and then fry in hot oil.
