Sweet strawberries

Turn out delicious desserts using luscious strawberries.

STRAWBERRIES WITH dollops of cream - does it not remind of Wimbledon? Well, now you can have the same in Hyderabad too for the strawberry season continues. Just try out the following desserts.

Mille fuille

Ingredients:

Fresh strawberries - 100 gms
Whipped cream - 100 gms
Icing sugar - 20 gms
For puff pastry:
Flour - 100 gms
Butter - 50 gms
Salt - a pinch
Sugar - a pinch

Method: To make puff pastry, knead a hard dough with flour, salt and sugar. Keep it aside for a while. Then flatten it into a sheet and then apply 1/3rd of the butter on the sheet.

Then fold it like one folds a bed sheet and roll it again. Repeat this process till the butter gets over.

Keep this dough for chilling.

Chop the strawberries finely and then mix them with whipped cream.

Take the puff pastry and roll it thinly to about three mm thickness.

Then bake it till it turns golden brown. Remove from the oven and cool.

Now take the cream and strawberries mixture and apply on the puff pastry as one does for the layering of cakes. The top layer should be of puff pastry. Decorate it with glaze icing made from icing sugar.

Flan

Ingredients:

Fresh strawberries - 100 gms
Cream - 50 ml
Sugar - 50 gms
Eggs - 2
Sweet pastry - 1 kg.

For sweet pastry:

Maida - 1 kg
Icing sugar - 1 kg
Butter/margarine - 1 kg
Eggs - 2

Cream butter and sugar together, add the eggs and cream well. Slowly fold in the maida. Refrigerate for half an hour.

Method: Roll the sweet pastry thinly to about two mm thickness and line it in a tart mould.

Prepare a mixture of cream, egg, sugar and fresh strawberries. Pour this mixture in the lined mould.

Bake it till it the mixture is cooked and the pastry turns golden brown. Leave it for some time and serve warm or cold.

Crepe

Ingredients:

Pancakes - 2
Fresh strawberries - 250 gms
Whipped cream - 100 gms
Sugar - 100 gms
Corn flour - 20 gms

Method: Take 150 gms of strawberries and puree into a fine paste. In a pan add little water, 30 gms of sugar and cook till the mixture starts boiling. When its cooks add corn flour to thicken it.

Take whipped cream, fresh strawberries and sugar. Mix it properly. Fill this mixture in the pancakes and fold into a triangle.

To serve it, pour the sauce on the crepes and serve chilled.

Cheese cake

Ingredients:
Hung curd - 50 gms
Gelatin - 5 gms
Cream - 15 ml
Strawberry - 50 gms
Strawberry crush - 10 ml
Sponge - 1 sheet
Eggs - 2
Sugar - 50 gms

Method: Break the eggs, add the sugar and heat on double boiler. Remember to whisk it continuously, whisk it till it thickens, then add the dissolved gelatin to it and keep on chilled water.

Mix hung curd, strawberries and strawberry crush and add to the egg mixture.

Line a ring mould with sponge and then pour this mixture in it and freeze the mould.

When set, de-mould and serve with whipped cream.
