Say it with strawberries
Strawberries are in season and this is the right time to try out these interesting recipes...

You could make summer wine with strawberries or be different and make a punch, combine it with paneer or even make a souffle. The possibilities, as the poet said, are endless.
Strawberry and Watermelon punch
Watermelon juice: 6 cups
Fresh Strawberries (mixed with 1/2 cup sugar): 1 cup Vanilla ice cream: 6 tbsps
Scoops of vanilla ice cream
Tall glasses and a straw
Chill the watermelon juice. Cut the strawberries into small pieces and mix the sugar with it to sweeten it. You can vary the quantity of sugar to your taste. Keep it for an hour in the fridge. Mix the watermelon juice and the strawberries along with the sugar. Add the ice cream and churn in a mixer. Fill a tall glass with the punch. Add a small scoop of vanilla ice cream. Serve immediately with a straw.
Fresh, sweet strawberries: 2 dozen
Sugar to mix with the strawberries: 1/2 cup
Amul Mithai mate: 1 tin
Milk: 2 cups
Gelatine: 5 tps
Fresh double fat cream: 300 gm
Powdered sugar: 5 tbsps
Strawberry essence: 2 tsp
Red colour: A few drops
For decorationStrawberries: 4
Fresh cream: 4-5 tbsp
Cut the strawberries into small pieces and mix it well with sugar. Keep it aside for one hour. Drain the excess water. Mix the gelatine with 1/2 cup water and dissolve over a low flame till it is of a smooth flowing consistency. Mix the milk, condensed milk, gelatine and strawberry pieces and blend in a mixer.
Mix the cream with sugar and beat the cream until light and fluffy by keeping over ice. Add the cream to the above mixture and mix well. Pour the above mixture in a souffle dish and chill it until set. (Do not freeze it). When the souffle sets, decorate with fresh cream and strawberries. Serve chilled.
Strawberry paneer delight
For the paneer: 2 litres
full fat milk
Juice of 2 lemons
Powdered sugar: 8-10 tbsps
Red colour: A few drops Strawberry essence: 1/2 tsp
Milk: 1/2 cup
For the strawberry layer
Sugar: 1/2 cup
Boil the milk. When it starts boiling add the lemon juice. When it curdles, drain the paneer in a muslin cloth and allow it to cool. Mix the paneer, sugar, colour,essence and milk. Blend in a mixer until smooth and fluffy.
Cut the strawberries into two halves and sprinkle sugar over it. Keep it aside and drain excess water.
Take a flat dish. Spread half of the paneer mixture. Chill the dish for about 2-3 hours. When firmly set cover with silver foil. Cut into small squares and serve chilled.
Fresh strawberry ice cream
Fresh strawberries: 4 dozen
Sugar (to be mixed with the strawberries) 1/2 to 1 cup
Milk: 5 cups
Corn flour: 3 tbsps
Sugar: 2 teacups
Strawberry essence: 1 tsp
Gelatine: 3 tbsp
Fresh thick cream: 300 gm
Cut the strawberries into small pieces, mix it with sugar and keep it aside for two hours. Boil the milk on a medium flame for about 20 minutes. Dissolve the corn flour in a little cold milk and add it to the boiling milk. Sir well. Add the sugar and give it another boil for about five minutes. Allow it to cool. Then add the strawberries with the syrup to the milk. Dissolve the gelatine and gradually add it to the milk. Mix well.
Pour this mixture in an ice cream box and put it to serve in a freezer.
Allow it to semi-set. Blend in a mixer. Add the fresh cream to this mixture and mix well. If you have an ice churner, pour the above mixture into it and churn until firm and set.
Alternately if you do not have a churner, pour the mixture into an ice cream box and freeze it in a freezer for five to six hours. Serve when well set.
