Yummy snacks

Ever imagined of turning the humble idlis, dosas and parathas into something exotic and interesting? Here are ways to do it.

ONE IS often fed up eating idlis, dosas and parathas in the regular way with chutneys and other accompaniments. Interested in pepping up dishes or even turning leftovers into yummy snacks? Then try these.

Paneer paratha roll

Ingredients:
Parathas - 2
Paneer - 100 gms
Onion (sliced) - 30 gms
Red chilli powder - 5 gms
Salt to taste
Capsicum juliennes - 50 gms
Tomatoes (chopped) -20 gms
Coriander powder - 5 gms
Tomato puree - 45 gms
Oil -45 ml

Method: Cut the paneer into long thin strips. In a pan, heat oil and saute onions. Add capsicums. When they are cooked, add the red chilli powder, salt, coriander powder and then add tomatoes.

Cook for a while and add the tomato puree. Then add paneer, making sure that the gravy is coated on the paneer and is not flowing.

Take the parathas and fill this mixture into it and then roll them. It is ready to eat.

Masala uttappam

Ingredients:
Uttappams - 4
Onions (chopped) - 10 gms
Tomatoes (chopped) -10 gms
Green chillies (chopped)-5 gms
Potato filling (same as for dosa) - 50 gms

Method:

Prepare masala uttappam by adding the chopped ingredients to its batter. On a hot tawa make the uttappam. At the same time heat the potato mixture When the uttappam gets cooked fill the potato mixture in the uttappam and fold it into half. This now looks like a dosa with a difference.

Masala wada

Ingredients:

Pre-soaked chana dal - 200 gms
Whole red chilli - 10
Onions (chopped) - 20 gms
Green chilli (chopped) -10 gms
Coriander leaves (chopped) 5 gms
Salt to taste
Oil to fry

Method: Put the pre-soaked chana dal in the grinder and grind it coarsely (so that the dal is not completely mashed and some grains remain whole). Add the whole red chillies while grinding.

Add the chopped green chillies, onions and coriander to the above batter. Heat oil in a kadai. Take the above mixture and make small balls and keep it aside.

When the oil gets heated up, flatten the balls made from the batter, dabbing little water on the hand and then drop it into the hot oil. Fry till golden brown and serve hot.

Idli burger

Ingredients:

Idlis - 2

Potato mixture (same as that of dosa) - 50 gms
Mushrooms (blanched and sliced) - 100 gms
Onions (sliced) - 30 gms
Red chilli powder - 5 gms
Salt to taste
Turmeric powder - a pinch
Oil - 5 ml

Method: Cut the idli into three parts, as one does for pastries. Heat oil and saute onions till light brown. Add red chilli powder, turmeric powder, mushrooms and salt.

On top of the middle half of the idli spread the potato mixture. Place the top part of the idli on it.

On the bottom part spread the mushroom mixture and then place the above on it layering it as one does for sandwiches. Serve with coconut chutney.
